January Pressing Matters

  • Pay attention to the storage room temperatures for your oil. If it’s kept in a place that is too cold, it may partially congeal and be very difficult to rack or bottle.

  • Before the rainy season sets in, complete any pruning. Plan to trim the orchard during a week when you will have at least three days of dry weather to protect the open cuts from disease.

  • Racking is one of the very best ways to insure that your oil retains its freshness and vitality. A transfer pump can make the racking process much faster and easier.
