Can you use olive oil in cookies?

Cookie mixes typically call for vegetable oil. Is there any reason one can't substitute olive oil?

Replacing one vegetable oil for another should not change the outcome of your recipe other than the flavor. If making cookies, use a bland or buttery flavored oil such as a Spring harvest Mission oil.

Replacing solid shortening with olive oil is tricky.
