unsaturated fatty acids are oxidised by oxygen under the influence of enzymes (lipoxygenase and cyclo-oxygenase) or without enzymes by autoxidation or photo-oxygenation. Other types of oxidation include a-oxidation, b-oxidation, w-oxidation, epoxidation, hydroxylation and oxidative cleavage by ozone (ozonolysis) or other reagent.
