We're looking for California olive oil that does not have the peppery finish -- it tastes kinda bitter and seems to ruin the taste of things, at least for me and my family. Is there a California olive oil that you happen to know about that does not have that kind of finish? I'd be most grateful for your response.
The biggest determinants of olive oil flavor are the olive variety and time of year it is picked. Right now Tuscan varieties are popular with producers but they tend to have a bitter or peppery finish.
Also look for oils which say “late harvest” or “winter.” Fruit that is riper because picked later in the year or during the winter will generally make a more mellow, fruity oil with less bitterness.
