Oils of Paicines is a small, family run olive oil producer located in the foothills near Hollister, California, just 10 miles North of Pinnacles National Monument. Our olive orchards are certified organic. We use solar energy and permaculture techniques to sustain the earth's environment. We pride ourselves in the special TLC we give to the production of our 100% Organic Extra Virgin Olive Oil. |

We have approximately 1300 Mission olive trees growing on our olive farm and all are 100% certified organic. |

Our Estate 100% Certified Organic Extra Virgin Olive Oil is produced from the Mission varietal; we gently pick our olives as they are turning from purple to black so that our oil has a distinctive buttery flavor. Our olives are rushed to a local mill for pressing. This process locks in important antioxidants that olive oil, a monounsaturated oil, is so well known for. We pride ourselves in creating this heart healthy and delicious product. |

Oils of Paicines is owned by two physicians, Barbara Rever and Jerry Ginsburg and sons Dustin and Ian. Our family is committed to sustainability of the environment and producing heart healthy products. The healthiest type of fats are monounsaturated fats, which include foods such as olive oil. Olive oil is 73% monounsaturated and is the best choice for cooking since it has the highest oxidation threshold. The Mediterranean diet has been associated with reduced levels of heart disease, and it is thought that the use of olive oil in this diet is a major factor in lowering the incidence of heart disease. Olive oil is also high in natural antioxidants and contains beneficial phyto-chemicals and phenols. Olive oil use has even been associated with a reduction in some types of common cancers as well as providing an anti-inflammatory compound with a pain relieving effect. |
