Fiordolivo Srl is a family-owned business situated in Acireale, near the city of Catania in Sicily. We produce and sell an 100% Italian Extra Virgin Olive Oil from three generations. We used a local variety of olives called Nocellara Etnea grown on the eastern side of the Mount Etna Volcano. Our extra virgin olive oil is high quality because it is still produced with the olives press which has been used in Mediterranean countries for centuries. |

We used a local variety of olives called Nocellara Etnea grown on the eastern side of the Mount Etna Volcano. Our extra virgin olive oil is high quality because it is still produced with the olives press which has been used in Mediterranean countries for centuries. Olives are picked up by hand from the beginning of Oct till the end of Nov. Hand picking is considered to produce a better olive oil than fruit that is mechanically harvested. Mechanical harvesting can bruise the fruit, increasing acidity. Then, olives are moved in rigid and airy containers and cold pressed with traditional grinders. Finally, oil is put in fixed temperature stainless steel containers. Here the decanting process starts naturally without filtering the oil, then it is packed or bottled. ORGANOLEPTIC PROPERTIES: COLOUR: golden yellow with green highlights. SMELL: if you smell it you have the sensation of notes of herbaceous plants. TASTE: slight fruity, characterized by notes of herbaceous together with notes of artichokes, sometimes of bitter almond and wild chicory. |
