We are located in the beautiful Santa Ynez Valley in Santa Barbara County, at the foot of Figueroa Mountain. We are certified as an organic farm by the California Certified Organic Farmers, CCOF. We farm our land in a way that emphasizes the use of renewable resources and the conservation of soil and water to enhance environmental quality for future generations. We also use solar energy through a photovoltaic installation in order to take advantage of the many sunny days in the Santa Ynez Valley. We have about 4,500 olive trees and a state-of-the-art Pieralisi mill. We offer public milling, bottling and labeling, and consulting services. We are interested in buying quality olives. We produce olive oil | ||
We produce a range of several high quality organic and traditional extra virgin olive oils. They are produced from different olive varieties at different levels of ripeness to achieve various taste profiles. All the olives are harvested by hand, milled immediately after picking without the use of heat or extra water. The oil is stored in stainless steel fusti or dark glass to ensure the best protection from oxidation. |

We have a state-of-the art Pieralisi mill that combines the best of traditional and modern methods. It is designed to increase yields, optimize flavors, decrease the bitterness sometimes found in traditional hammermills, and preserve anti-oxidants. This mill is particularly well suited to processing different batches from different orchards and to fine-tune the results depending on our clients’ needs. |

We are in the unique position of having personal experience with planting orchards, growing olives and maintaining an organic orchard, making olive oil, packaging and marketing it, running small and large businesses, and doing building design and construction. Shawn graduated from Stanford University with an M.A. from the Food Research Institute. He owned a landscape and a construction company and has extensive management experience. After he and his wife, Antoinette, inherited an olive orchard in Provence and got acquainted with olives, they decided to plant an olive orchard and start a milling business in the Santa Ynez Valley in 2003. They bought The Olive Oil Source in 2008. Shawn was a member of the Board of Directors of the California Olive Oil Council from 2005 to 2007. |

Antoinette received an M.S. in Agricultural Sciences from the prestigious Ecole Nationale d'Agronomie in France where she was top of her class. She then received an M.A. and a Ph.D. from the Food Research Institute at Stanford University. After more than 15 years as Director of Budgets for Stanford University, it was time to return to her first interests, agriculture and food, with Figueroa Farms and The Olive Oil Source which she runs with her husband, Shawn. |
